The season starts with a seed variety originating in China, known for its mostly large and mildly pungent cloves, which are ready for harvest in late, May. This white variety has a purple undertone, which distinguishes it from other California varieties. Much of this product goes into the fresh whole-peeled garlic operations due to its outstanding peeled appearance. The first white garlic of the season is the "California Early" cultivar, which is harvested late June through August. The "California Late" cultivar is packed in August and September, and immediately put into cold storage for marketing after the shipping of "California Early" usually near the end of the calendar year. Thomson International packs approximately three months of the year and ships directly from cold storage the remainder of the year. In addition to garlic, rotation crops of carrots, cotton, and alfalfa are grown in order to interrupt plant disease cycles and avoid nutritional depletions of the soil. The primary enterprise of Thomson International is fresh bulb garlic and fresh peeled garlic production and distribution, Primary labels include Tender Loving Care "TLC" and "Fresh Peeled." "El Competitor" label is packed to compete with packs of other suppliers where price is a primary attribute. "Old Scotchman" label is utilized for commercial grade garlic for those most concerned with utility and not retail appearance.

As the season begins in late May with the harvest of Chinese cultivar, two packing lines run 16 hours a day. Our onsite cold storage holds the product just under 32 degrees F at 60-70% relative humidity allowing year round garlic availability. Throughout April, May, and June we supplement our garlic supply with garlic grown in Mexico and Argentina.

The industry standard bulk 30-pound cartons comprise the majority of all packing. Twenty-two pound (10 kilo) cartons are packed primarily for the export market. Also available are 5 and 10 pound units for domestic consumption. Three-pound bags and 2 count cello garlic are minor parts of the business allowing utilization of the smaller garlic sizes.

Peeled garlic is packaged in industry demanded 4X5# jars and 6X3# jars, and 12X4 oz. jars, as well as 30#, 5#, 3# bags. Packs including custom labeling are available upon request and specific needs of the customers.
